Freekeh the Wonder Grain

In 2300, B.C., a nation in the Eastern Mediterranean expected an enemy to lay siege to their walled city. They picked the green heads of their wheat and stored them to fight starvation. The green wheat caught fire and the outside burnt; however, when the people rubbed the heads of the wheat, delicious green grains were exposed which they called “Freekeh.” In the ancient Aramaic language, freekeh means “the rubbed one.”
